Ingredients (for 2 servings):
- 200g bottle gourd (peeled and chopped)
- 30g onion (chopped)
- 1 clove garlic (chopped)
- 1 tsp olive oil (5ml)
- 1 cup water or vegetable stock
- 1/4 tsp black pepper powder
- Salt to taste
Instructions:
- Heat oil, sauté onion and garlic until fragrant.
- Add bottle gourd and water. Cook until soft.
- Blend into a smooth puree, reheat, and season with salt and pepper.
- Serve hot with a sprinkle of coriander.
